I am going to try something different this time around. I’ve been putting up some recipes that I’ve been cooking for my new Low Carb lifestyle, but I have found trying to cook this way with my hectic schedule has been too much. So I am going to try to cook most of my meals on my day off-this may mean salads often.
*I start my morning out with a coffee, heavy cream, coconut oil blend (I use one to two teaspoons of coconut oil.) It keeps me going for a few hours:)
Steak Salad-Easy!
I picked up some cut stew meat, cooked them up with some seasoning, and placed them on top of lettuce, added shredded cheddar, and then the Guacamole.
Guacamole– Remember I do everything to taste.
2 avocados, onion, garlic, cilantro, tomatoes, salt, lime, and green chili.
Corn Beef:
This I may have gone a little over on the carbs. I’m not sure.
Place corn beef in a crock pot and add beer. I always use a dark beer- and yes lots of carbs, but after it’s cooked I’m not sure?
I let the corn beef simmer on low in the crock pot for at least 24 hours, ( I usually start this in the morning.) By the next morning I add carrots and onion, pretty big chunks.
*Remember I’m not doing starches-so No potatoes!*
Close to dinner time I take the meat, carrots and onion out of the crockpot, place in a pan, add some mustard and a touch of brown sugar on top of the corn beef, cover and place in the oven at 350 degrees for 20-30 minutes.
Walla! Dinner with leftovers:)
