My homemade Pesto:

*Remember I measure to my own tastes


Put spinach and a small amount of olive oil in a food processor and blend until it’s a nice consistency- if needed you can add more olive oil. Once blended add basil, parmesan cheese and pine nuts. Blend. Taste.

If needed add more of the above. Once satisfied with the taste add some parmesan cheese. Blend. Taste.

*This is how I get my Pesto to taste the way I like.



Pesto Quiche

6 eggs

dash of salt and pepper

1/3 cup milk

3 tablespoons pesto

1 cup mozzarella


*Mix eggs, salt, pepper, and milk until fluffy

Add pesto and mix well

Add cheese

*Heat oven to 350 degrees

butter souffle dishes

place dishes on a cookie sheet

fill with egg mixture (about 3/4 full)

Bake for 30 minutes or until a toothpick comes out of the mixture clean.
