On a healthy lifestyle…
I visited my Dr. recently because of the fatigue I was going through and she had me get some blood work done. Everything came back great except for low vitamin D (crazy since I live in New Mexico where the sun shines most of the year) and hormone imbalance.
What? I’m an avid hiker, so I’m not overweight. I had to go gluten free a few years back so I eat fairly healthy. Hmm… Getting older is not for the weak minded. Especially if you’re female.
She put me on a low carb diet to balance my hormones. Scream! What did I ever do to deserve this?
Looking back at my diet the last few months I will admit that I was drinking more sugar than I realized-energizing teas. And I fell into the starch zone…mainly potatoes and rice flour. Both convert into sugar in your body. So yes my carb intake was a little higher than it should have been. And my body did what was natural-it started to rebel.
After my initial shock and freak out mode. It took about a day to come to terms with my new lifestyle change, again, I talked to a friend of mine who has been low carb for a couple of years. She’s giving me some great advice, and now I don’t feel like I’m going to waist away from lowering my carbs.
Now I don’t need to go as low carb as she did, so I don’t count my carbs. But I need to be mindful of my intake of sugars.
She starts with a cup of coffee in the morning and adds heavy cream and some coconut oil to it. It’s actually not bad and gives your body some extra energy. I’m a coffee drinker so replacing my coconut milk with the ingredients above was easy. If I know I have to work at night after I get home from work-LOL- I will have the coffee with cream. It gives me an extra boost!
Strawberries, Raspberries, and Blueberries (my favorite fruit) are high in antioxidants and low in sugar. I can handle that… And of course I still drink my superfood. I just don’t mix it with a big glass of juice anymore. Unfortunately drinking juice is like mainlining sugar. I’m still trying to figure out what to mix with my superfood. On its own it tastes horrible:(
Of course I have added extra vitamin D-still in shock about that- Iodine for my low thyroid, and my doc put me on some bioidentical hormones. Very pricey! My goal right now is to balance my hormones more naturally, so I’m not spending half of my paycheck on nutrition.
Why am I telling you this, you ask? Well I thought I would share some of the recipes I find for anyone who may want to lower their carb intake and feel more balanced. I know I don’t have the time to constantly look up new recipes. And thanks to my friends help- she doesn’t have hormonal issues anymore since she changed the way she eats- I don’t have to. So I’m passing on some of the info I have been given.
Coconut Biscuits are very filling and easy to make:)
⅓ cup coconut flour (Higher altitudes may require more.)
4 tablespoons butter or ghee
4 organic eggs
½ teaspoon baking soda
pinch of salt
1 teaspoon raw honey (optional)
Preheat oven to 400 degrees.
Combine all ingredients in food processor or blender.
Pulse until blended.
Allow to sit for 1-2 minutes to allow dough to expand and become cohesive.
Form into “patties” and press onto baking stone or cookie sheet with parchment paper.
Bake at 400 degrees for 15 minutes or until done.
Add green chili and cheese= Yum
